Building an internal grayscale card for the SE/30

This is correct... at the moment.
The original Formac ProNitron card on which this design is based used a software controllable "switch" to change the video clock(-devider) so that it could display 1- and 8-bit.
@Bolle had a hard time fiddling with this and ended up doing "8bit only" for now. But he can fill you in much better than I can... I'm just the software guy (and happy to flick that switch any time 😉).

So yes - Currently, if a game/application insists on b/w it will get a "𝖁𝖊𝖗𝖇𝖔𝖙𝖊𝖓!" from the card and send back home
It's not just 1-bit either - tons of very important games also rely on 4-bit color being available. I wish I could help fix this, sounds like a weird hardware design choice.

Like others I’d love this, but the lack of original B&W 1-bit output is a deal breaker for me. Is it a feature that might come?

Exactly. I’ve got ten of ‘em. My wife refers to them as a “family of SE/30’s.”
My partner just says "What's the point? They all look the same." or "What does this one do that the others don't?". I try to explain but she quickly loses interest. :)

I believe I would be served divorce papers... If I can eventually 'trade up' one (or both) of my SEs for an SE/30 then I would be interested in getting it all decked out with purple. But the simplicity of the SE (and less leaky caps) has its own charms too.

same, especially when in use with Bolle's Twinspark, I would rather have ethernet on the external port than a monitor port
You can do both ports with bolle's riser. I have a video card (another card, not Bolle's or a micron) wired into the 15pin dsub and the RJ45 for ethernet.
