Perhaps a little more straightforward option, Macintosh Garden has different CD/diskette images for different versions of the OS, and they will often have preload images for different systems.
The legacy CDs were really meant for shops that might be servicing somewhere between "several dozens" and "a few hundred" customer systems each mongh and might need to install different software versions on them. Neat to have, but not really any more practical than just using a retail 7.6.1 CD on most 68k and early PPC Macs.
That said, I'm also interested in what happens with that image.
