iTunes 1 and 2 worked with OS 9, though they don't have as many features as the newer versions. You can get iTunes 2.0.4 (which I believe is the latest release that'll run on OS 9) from here:

If you're running 8.6, you can hack iTunes 1 to work with it if you really want. The patch is available from here:

For other options, SoundJam MP is basically iTunes before Apple got their hands on it. You might find it hard to track down a serial number for it though since it was Shareware and is no longer sold.
Panic's Audion is now available for free, and probably has the most features for OS 9, so I'd recommend that:

I'm not sure if any of them are compatible with the remote though.
Finally, you could install Linux on the Mac and run a player on that. There are quite a few available:

Can you tell us more about the Performa - what model is it?
No classic Mac audio application had built in remote control functionality.
Your best bet would be to use a Macro app like Quickkeys.
Do you know if the Apple remote in effect sent "key presses" or function keys to the computer?
If so - then you are golden - you can just have Quickkeys interpret those "channel up" or whatever - as "Next track" for iTunes or whatever you use.

If you're playing CDs, shouldn't AppleCD Audio Player work?
The remote also controls the CD Player and FM Radio applications, though support for the FM Radio app may be limited. I don't recall if it changes channels or not. No other applications work with the remote control.
It would be really darn cool if some hacker could find where the remote is implemented on the system level and tap into it to extend the functionality to other applications like iTunes, though. Of course, Apple doesn't document this information for developers...
