Lots of great ideas, everyone. Thank you! Didn't know when I found this that I was finding something a little special. It is currently at my office in Boise, and I am in two job season, so it will be a bit before I can really tear in, but will do so eagerly when I have time. This will be both a fun restoration, and useful for my work in accessing old files made in old programs, without having to emulate or mess around on newer machines. I do have a 17 inch early 00's flat screen apple monitor coming (with a loose stand I hope to fix) that I may use with it also.
I used to have ALL those peripherals you mentioned. A cool scsi Zip drive, an apple burner (this one was purple clear plastic in line with the iMac flavors, and others. But over time, I let all those go. Wish I didn't! I do have modern USB CD/R-DVD drives I can use with my modern machines. I have had to have those for work purposes when different police departments and prosecutors provided discovery on them. So good to go there. Just not as cool as an apple branded one.
