Recently, I stumbled into two Micron XCEED Color 30s. Since I have two SE/30s here, I thought it would be nice to make at least one of them into an internal greyscale machine, but of course neither of them came with the yoke adapter board or adapter harness. I know this isn't exactly ground-breaking technology (it's literally just constructed from original images and the data from Gamba's work), but it does have the distinct benefits of 1) having a current BOM, 2) being open-source, and 3) actually existing.
I'm waiting for parts to verify placement of pads for the tube socket, so I haven't built one just yet, but it should be sound; let me know if you build one, and whether or not it explodes your SE/30 or video card. I'll post updates here as the build progresses.
