Macintosh pieced together?

Is there any way to find out if my macintosh has just been pieced together from random parts on ebay?

Not really, no.

Also, given the price of spares compared to whole machines, that would be a wildly uneconomic use of someone's time.

One more question, Is there a difference between the 128k and the 512k motherboard? If so, could you tell me?

Not reliably. Earlier 128ks had a differently printed board, but later ones are the same except for the RAM, IIRC.

It's not unheard of for multiple Macs be merged into one for the "best" parts; but you'd hope the one you are looking at isn't comprised of reject parts. A decent hobbyist seller would know this and state what is functional and not, you'd hope.
