I want to replace the old fan in my revision C iMac G3 with a superior quiet Noctua fan. Any recommendations which Noctua fan to purchase?

I would not do this if I were you. Noctua fans are quiet, but this is in part because they have lower airflow and static pressure. They're good for their noise level, but the fan in the Trayloader iMac G3 has to pull the air in from the bottom of the machine, through the logic board area, and then past all the CRT and PSU/Analog board guts out the top. A Noctua fan is not going to be sufficient, and you'll likely shorten the iMac's lifespan due to increased temperatures.
If you need to replace it you would start by getting the old fan out and looking for data about it, then seeing if you can find something comparable. Be careful though as not all manufacturers use the same methodology to come up with their numbers.
I seem to recall those machines using a size which is less common these days, so your options for specs won't be as good as something more typical.
