Thanks! That did the trick :)
Looking at my previous tries the only bit I missed was a way to force the comparison. What reference do you recommend to figuring out the hex op codes?
Also I notice that, at least on my emulated setup, the file can take up to a few seconds to be deleted which is...
I am modifying FinderHack, https://macintoshgarden.org/apps/finderhack
in two ways
1. change the hot key for "Move To Trash" (done with simple hex edit to change menu key from "T" 0x54 to "Backspace/Delete" 0x08)
2. to skip the confirmation dialog alert (I'm close but not there yet, help...
HFSExplorer is the only one I know of. There is no install, you just download the files and double-click /bin/explorer to run.
It would be nice if there was a more standard Mac app wrapper of it.
At the command line there's also:

No sign of GBMac on the discs I've imaged so far.
But I found it here: https://www.macintoshrepository.org/10592-gbmac
And here: https://hp.vector.co.jp/authors/VA009321/index2.html (and via searching for that filename on google)
I've uploaded seventeen(!) CD-ROMs that were distributed with issues of the renowned Japanese Macintosh magazine MACLIFE.
Lots of old apps to rediscover! Text contents included.

I've written a postmortem about how I created my "Playdate Pre-order Celebration" illustration, shown below, using Deneba artWORKS in Macintosh System 7 running on iPad Pro.

I'd buy reels if I had the intention of reselling as kits or had multiple Macs to do.
Would appreciate your part numbers, I may have more luck finding those locally. Or for you to send me some caps. Happy to pay including postage via PayPal.
I'll send you a PM @cheesestraws thank you.
I've ordered an SCSI2SD and 2MB extra RAM.
Where do people recommend for cap kits?
Console5 are not shipping to the UK because Brexit and the into other one I can find on eBay ships from Russia. I don't really want to import, or buy more caps than I need.
Is that capacitor visible in my earlier photos? If not, I can take more photos.
In other news:
I'm just about to zap the PRAM from System 6 (hold cmd+opt+shift+tab whilst opening Control Panel)
Update:
- All keys on keyboard work just fine (see photo)
with hard drive power and data disconnected:
- Boots from floppy
- Boots from ROM with key combo (cmd+opt+x+o)
either way:
- PRAM reset key combo still does nothing? (cmd+opt+p+r)
Any further thoughts?
I'll recap it for sure.
Keyboard works: to type the label name of my system floppy ("System FD"), and also the only way to get it to boot from floppy is for me to hold command+alt+shift+delete. I'll try all keys next time I boot it up.
I'll probably go for SCSI2SD if the drive is still dead...
