You can use Toast 4 on a 68k machine. I have Toast Deluxe 4.1.2 installed in my BasilliskII 68k mac emu and it works a treat!

I have Toast 4.0.1 on my Quadra 840av, os 8.1. It worked well, but at the moment my cdr, the power supply died, I am looking for an scsi tower to rehouse it & a couple of other drives.
