I would assume that you can, since I seem to recall hearing somewhere that if a = b and b = c, then a = c.
In other words, the Q800 has the same logic board as the Q650, and the Q650 is identical case-wise to a IIvx, with the exception that the aaui ethernet port cover will need to be knocked out to accommodate the new logic board. Apple even sold Q650 logic board upgrades for the IIvx. Should work, then. The IIvx case is also a good deal easier to work with if you want to install memory, etc.
You could probably even get the Quadra 650 badge and stick it on the front (the plastic square comes out).
