I have a Quadra 800 that is working. the case is beat up. I have a dead IIvx. The PSU is good. The case is nice. Can I put the 800 guts in the IIvx and use the IIvx PSU as well?

I would assume that you can, since I seem to recall hearing somewhere that if a = b and b = c, then a = c.
In other words, the Q800 has the same logic board as the Q650, and the Q650 is identical case-wise to a IIvx, with the exception that the aaui ethernet port cover will need to be knocked out to accommodate the new logic board. Apple even sold Q650 logic board upgrades for the IIvx. Should work, then. The IIvx case is also a good deal easier to work with if you want to install memory, etc.
You could probably even get the Quadra 650 badge and stick it on the front (the plastic square comes out).

The Quadra 8000 logic board uses a 2-plug PSU with cables, the same as the 840av (I checked the part numbers). The plugs are on the very top edge of the board as it is installed in the Q800, at the back by the speaker.

Right. The Quadra 650 and IIvx both use a different Power Supply, that has one 8-pin connector that is mounted directly to the bottom of the PSU. This is a 'drop-in' type PSU that was also used on the IIc/ci/cx and also the 7100. The PSU connector is a good inch inboard looking at the 650's schematics.
This means that the PSU from the IIvx won't line up, won't supply enough lines to the board, and well... won't work.
I'm sure the board layouts for the Q800 and Q650 look similar but they are not the same. I have the Apple Service Manuals for all the 68k desktops and have double checked part numbers of PSUs against each computer.

I have had it in my empty head that the Q800 and the Q650 were essentially the same machine, but in a different case. Same slots, same processor, same vram, yes, but I just downloaded the service manual and it's true, the machines have different power supplies and maybe different logic board layouts. Mea culpa.

Hello fellow 68k users! 
I tried the same thing with a Quadra 700 case and PSU some time ago and it worked without problems. Didn't had to cut any holes in it, too, because the ports fit in perfectly. I was just limited to two nubus ports, because i didn't wanted to harm the case .
However, the strange thing about it was, that it really detected a Q650 mobo although it was a Q800 one. I don't know why that happened, my only guess is the different PSU.
