I did one a number of years back. At the time I had a IIgs and a II+ permanently setup but not the IIe and it was a pain hauling everything out and setting it all up. So I took a PC tower and installed a IIe motherboard along with two 5 1/4" drives, one 3.5" superdrive, a SCSI HD, CD-ROM. I had an Echo II connected to the cases front speaker. Used a AE 1mb Aux slot card with RGB option to run a IIgs monitor. I wired three extra slots in parallel with slot 2 for cards that didn't need a slot id. I ran a cable from the keyboard connector to a db25 plug. For a keyboard I used a IIgs keyboard and totally rewired it. Modified the IIe keyboard ROM so that the Clear key did the same as it did on the IIgs. Don't think I ever used that key after testing but I couldn't have a key that just did nothing. I would have liked a second superdrive but I ran out of bays. I suppose I could have mounted the HD under the power supply but I wanted to keep that area clear for additional custom cables. The case had a small green LED display that I don't recall what it said but it says IIE now. Was a fun project.
