The Lisa is a much higher value machine than a G3 AIO so you can afford to pay $100+ for shipping and still keep the price within reasonable limits. Lisa's also appreciate faster than G3 AIO's so you'll get back that shipping charge when you resell.
I've seen the non-Apple branded RAM chips for sale cheaper than what you have found them for BUT the electronics supply houses that I have seen them for sale in all have a minimum order requirement. I would have had to have bought dozens of them to meet the minimum and I have no use for that...
The G3 AIO is way too heavy. The shipping on them is a deal killer. If you can pick one up locally, it's nice, but if you have to have it shipped you'll be paying way more than the machine is worth.

Agree with Gorgonops about not dumping too much money into this machine. A 3,1 8-core Mac Pro can be bought in the $500 range now and will run 10.10 Yosemite. No sense investing that much in a 1,1 at this point.
