A good piece of software if you're running on a modern Mac is Reason. Has enough features to create tracks without any MIDI input, but if you're wanting to do serious keyboard sessions it will interface with probably any MIDI device. For doing recording from standard instruments outside of MIDI, you can use Record (also from the same company). Reason will also interface with existing software like Logic or Pro Tools.

Reason isn't exactly difficult to learn, but you'd want to have a minimal understanding on how synthesizers and loop machines work. There is much more to it than something like GarageBand.
