Is it possible to use a stylewriter 1200 on a "modern" version of macOS

your best bet is probably to try using the CUPS driver, I haven't used myself since probably around OS X 10.6 era, but I had an old laser writer I used to use this way with no issues.
obviously that was many years ago and was a lifetime ago in terms on Mac OS X changes, however as far as I can see the CUPS driver still works on modern Macs.

one thing to be mindful though is that if you are using a usb to serial adaptor you probably need one that used a RS-422 connection..
supposedly CUPS will work with Network printers too, but I've never tested that function
