Is there such a card or recommended adapter to adapt mSATA to ATA/IDE for ATA Macs that will work?

Certainly, for about $11.  Whether it works or not, I cannot say.  I have not tried it.

Here is a page of adapters from Sintech.  Scroll down a bit to get to the MSATA adapter.  Once you've identified the part number, check Amazon, if you like ordering from Amazon.  Often the adapters are available there.

PA6008A(M811)  You probably need a 44 pin to 40 pin PATA adapter as well.
