I went and picked up a Power Mac 7300/200 off Freecycle today! Though I haven't gotten to try it yet; my mom's being completely unreasonable saying that I now have too many computers. :\
The 7300/200 is one of the best pre-G3 powermacs in my opinion. It's not a pain in the posterior to upgrade the RAM or replace the battery like the 9500 and 8500. It has a good number of RAM slots which makes putting a good amount of memory in the machines easy if you can only source 16 or 32MB DIMMs. The processor is on a daughtercard, so it's easy to pull out and replace with a faster processor. There's four onboard VRAM slots that let you upgrade the VRAM to 4 megabytes -- which is great if you're not interested in popping a video card into one of the PCI slots. The L2 cache is not soldered to the board, so it's easy to upgrade.
I was using my 7300 as a router/server running Debian Stable. I'm now using it as a development system. It runs Mac OS 8.6 like a champ, which is just fine for Metrowerks' CodeWarrior 7.
