I'm using a MDD to play a few games. For gaming I found mechanical hard drives to be a pain. I tried various hard drive setups but right now I'm using a Compact Flash with ide adapter. Fast and inexpensive

What software did you use for benchmarking?

I have several Sonnet SATA cards. They are bootable. I've used one in an 8600. Earlier cards listed MacOS 8.5 as minimum OS but I've heard of people using earlier OSes.

Aside from CPU power, there's the RAM issue for the currant web. With 4 other tabs open Activity monitor says my browser alone is using 3gb RAM

It's very very rare to have a floppy controller with 20 pin connectors and adapters to 19 pin. In virtually all IIe with a 19 pin connector the cable is permanently attached to the card. Best choice is to either find another floppy controller or a physical disk of a copy program.
