Where did you get it? I don't recall Apple ever using the "Release Candidate" label for system software. If you pop it into a OS X machine take a look at /System/Library/software_version. It'll show the version and build number.
If it's just for accessing data CD Sunrise is great, free and small. With System 6 you also need to install the Desktop Manager init to stop it from trying to rebuild the desktop on the CD.
You can image it with Disk Copy 6.3.3. Make the image read/write and uncompressed. In order to do this you'll need to boot from a floppy or CD as you can't completely image a running system. You'll also need a destination for the image. In my case, I save it to a network folder via Appleshare...

I ATX-ed my first Gigabit Ethernet. But the PSU in the MDD is different. It's a slim style (like those found in rack units). It's possible to hang a ATX PSU in a MDD but it looks pretty bad. I'd rather hold out for a replacement PSU. I wondered about taking the guts of a working rack unit PSU...

It might be worth pointing out (for those who want to try this and don't have a Leopard machine or disc) that the required binary can be extracted from the 10.5.8 Combo Update, freely downloadable from Apple. You can use Pacifist to get it out.

It might be overkill, but another option is to run a Linux virtual machine with Netatalk. Use the VM's shared folder option to add your Mac's hard disk (or folders) and share it out via netatalk. I use a similar system here on Windows 7. It's connectible from System 6 to Lion.
The one thing I'd use a x100 for is to try and run the old D7 build of Copland. Apparently it only works on the first-gen PPC Macs.
If you're feeling adventurous you could try that. It'd be nice to see some new screens or videos of it up and running.
Glad that worked out. I had a look through the 3DO SDK disks too (as the dev machines were connected to nubus Macs over a FDDI connection) but didn't see anything useful. There's a driver for the nubus board but I couldn't see any FDDI-related resources in it.
