What about using a simple STM32 with DMA : you can get an infinite (well limited by RAM of course) buffer.
It would also work as a single chip thing and some have usb hardware so that you can emulate a serial port over usb and get quick transfer speed. :)

I was not aware of that indeed. I just had a quick look. If I understand well the ENET driver is not a hardware driver but communicates directly with the hardware drivers.

The fact that you see LAN on the screenshot is the fact that each SCSI device has a type https://en.wikipedia.org/wiki/SCSI_Peripheral_Device_Type and that's what SCSI Probe checks. But it does not mean mac os will support this device out of the box :)
