If you just want the apps, use Pacifist. I've done this with older OS X 10.2 OEM discs in order to get AppleWorks to convert a document from .wrk to .doc and I was able to extract it from the install discs using Pacifist.

That is a nice Mac. I've actually got a 400 MHz one at work that I've upgraded to 1 GB of RAM that runs OS X and Ubuntu Hardy quite nicely. For very little nowadays, it's an awesome system.
