As far as I remember, every Mac game controller pre-USB used the ADB port.
Apart from the three options listed by beachycove above, there are also Localtalk to Ethernet converters, which were made for connecting printers to Ethernet networks. They will work just as well to connect your Plus to your G4's ethernet port.
What joystick? I hope it's not one from a PC or literally any other computer or gaming system. The only joysticks which will work with a Mac /edit/ pre-USB / are ones made for a Mac. If you've somehow plugged another type of joystick into the back of your Plus, there's every chance you've...
ebay is probably your best bet, though you might be looking for a while.
It might be worth looking over the key matrix - and the keyboard ribbon - for any breaks and patching them with a conductive ink pen.
If those ROMs are a standard, obtainable part, it should be possible to make up a single ROM with switchable ROMs in it. It's a semi-common trick with older systems that use a ROM - find a larger, pin-compatible replacement, and switch the most significant address lines.
Note that any USB2 card will only run at USB1.1 speeds under OS 9. In OS X you will get the full speed.
IIRC, that machine will take 1.5GB of RAM. If you only intend to run OS 9, 1GB is plenty, but for OS X I would recommend maxing it out.
Any G3 or G4 ZIF socket CPU * will work in that...
That's true on the desktops, but not on the laptops. When I find my Stealthport serial adapter, I'll have a close look at it with an eye to replication.
That's unfortunate. Is there anywhere on the logic board upstream of the datapump where we could hijack a true TTL serial signal from?
