I've used a 128GB and downgraded to a 64GB because it was wasteful and even then its mostly empty. As davewongillies said, 32GB should be plenty of space.
I have had success using the BlueSCSI v2 and Joe's Computer Museum had stock of the fully assembled kit not too long ago. Also uses DaynaPORT emulation for WiFi connectivity.
I have had success ordering the recycled disks in both 1.44 and 720k from https://www.floppydisk.com/.
They are 100% guaranteed to work and I have not found one with an issue.

This machine came with a dead HDD so I have only used it with the DB25 BlueSCSI. I guess I can take the internal BlueSCSI from my IIci and try it that way. I will try this tonight :)

I think the concern is not one based in complete fact. My IIci has a HDD directly above the floppy drive, like we are talking 1/2" away and you will never find an issue between the two.

I am no expert but I have read in a few threads where others with odd RTC issues that the issue was usually a bad trace or bad contacts on the RTC chip. Might need to start probing around to make sure all of the pins are secure as well as correctly connected to the PCB.

You should try 128MB on a 68030 LMAO.
My IIci takes close to 2 minutes to boot. Ordered a ROMINATOR to disable the RAM check as in software that is not possible for me and my setup.
For now I just enjoy my beer while I patiently wait for boot up, its part of the nostalgia in my book.
