IIRC, undefined symbol would be a linker error. It may mean that you're not using the right version of the library, or that you didn't tell the compiler to link against the library.

On the testing SIMMs one module at a time bit, I'd say the LC since it's easy to work in and can accept memory in banks of two. Most Macs that use 30-pin SIMMs need memory installed in banks of 4.
It has been a while since I used System 7.1, but I'm pretty sure that the install floppy has a System Folder. Since it seems semi-bootable maybe the folder got renamed. The System Folder will be the one with the System and Finder files.
It has been a while, so I could be wrong here, but I think that you also have to change "slot 6" to "my card", otherwise it will assume that you're trying to boot from the internal floppy controller.
