Agreed. If the PSU was working before and it’s still showing the right voltage it doesn’t make sense to blame the PSU and analog board at this stage. It seems pretty clear the issue is related to the logic board recap and the analog board/PSU is a red herring.
Super cool! Just to confirm my understanding, if you’re using real hardware and not minivmac, you would need two of these, right? Ie if I have a netatalk server on Ethernet, I wouldn’t be able to connect to it with this device, but if I had two macs and two of these I could link them together...

Now I’m trying to remember whether the tabs are on the logic board or in the chassis. Ultimately it’s whatever needs to be done to ensure a good grounding between logic board and chassis.

Try bending (to make better contact) the grounding tabs under the logic board. Cleaning them is a good idea also.
I had recapped my cc analog board (lots of caps) and had some colour issues (missing Colors) after and it was those silly grounding tabs.

I found the power circuit schematic you referenced to be fully accurate when I fixed my IIci. There were about three jumper wires I had to add. Note that pin 1 might between the chip and Apples markings on the logic board (I think and I can’t recall which defence is used by the schematic)...

You’ve got a ton of corrosion on UD13. I am betting there is a lot of cap too under there too. You’ll need to check continuity to all of the points suggested by the soft power schematic. Those chips are all still available and I would replace them but ultimately they may need to be cleaned...
@olePigeon Check it connected to the motherboard. You should be able to find a way to jumper those pins and then attach the PSU. Just make sure it’s the right pins.
Sorry, I should have been more clear. I had success downloading from an AppleShare server but uploading files (ie copying to a server) on Wifi had issues that I believe were timing related.
It sounds like your PSU isn’t connected to the logic board when you short the pins though, is that correct? It should be otherwise I’m not sure what you’re testing. I am pretty sure you need to keep the pins shorted for the PSU to stay on (unlike an ATX). If that works then your PSU is likely...
Does WLAN support mean you can use Pi’s wifi? Have you tried transferring AppleShare over AppleTalk? I had some issues with Scuznet AppleShare over AppleTalk over wifi but never went back to try to sort it out.
