I do the same. An Amazon assortment of black ones got me through many projects, though the ones in this auction do look pretty specific. Some of the ones I got in the assortment are close enough for Apple IIs which is awesome.

What a gorgeous system, I would want the IIe style mouse too; I really hope you can get it sorted. All else fails head over to Apple Fritter forums, those guys know everything Apple II to an impressive degree.
Can't say for sure as I don't own a stealth IIGS. But I can say I have a stash of R6502's for faulty IIe mouse cards:

You might need to set it to 'Your Card' instead of Mouse port. I can't say as I've never tried my IIe mouse card in a IIGS. Can't hurt to try; realistically I don't see the system using the Apple II mouse interface unless the slot is configured for 'Your Card'.

Sure would be nice. I have a project right now meant for a Pi 3, but the only one I have is my DNS server right now. And I'm not in a hurry to take a Pi 4 away from my RaSCSI just so I can steal the 3 for my other project (BMC64, C64 case and keyboard with R Pi C64 Emulator).
I'm not sure if this will help but when formatting on a IIgs you should have interleave options. 4:1 is easier for a drive than 2:1 and I don't know if mac formats default to the latter. Floppy heads don't read continously they skip sectors, so the tighter the interleave of the format the better...

BMOW makes the Yellowstone disk controller that supports a lot of [3.5] drives. I recently tested one on my Laser 128. I use that disk controller for unidisk drives or the unidisk mode of a FloppyEMU. Also works with a FujuNet (pictured) :)

I normally try to use actual SSDs over CF or SD because of concern for longevity of multiple writes, but I can't scientifically back that up so don't take it as gospel...
