I've also found a few references to it being called an HPCN vs HPDN connector, however, that doesn't seem to help much with my search either, guess this connector is just weird. :(

Well they are both 50pin, just with a slightly different internal connector one has two rows of 25 pins, and the other has a chunk of plastic between the two rows. I think I finally figured out what it is called but it doesn't help me so far at all as it seems rather obscure.
I believe it's a...
And this is what I found that I believe will work for the more standard connector: https://www.ebay.com/itm/270841940459 visually they are physically the same and have the same number of pins but one has this center strip in the middle. Ugh. :(
I think I have the right cable sorted for one of the connectors, which appears to be an HPD50 cable, however the other one with the center strip is proving very hard to find. I can only find one example of it online and it is using the same name as the individually pinned cable. Unfortunately...
Alright so I have some peripherals an external scsi hd, and an external scsi cd drive. Both of them have cables that adapt them to PowerBook scsi hd-30 or whatever. I’m wanting to get some cables that would let me use the directly with regular I think it’s (DB 25?) desktop mac external scsi...
Nice! I'm glad this worked for you, truthfully it should work anywhere a standard 3.5" IDE drive was used, as my intention was to replicate that as much as possible with the connector locations. I wish there was just one adapter to do this but at least there is a way.
They are already available I picked up a couple and so far they are great. https://store.rabbitholecomputing.com/RETRO-SATA-PCI-p/rhc-sata-sii3112-pci-hard-card.htm
Parts for these are pretty much unobtanium, you have to just grab them when they come up which is rarely, I have a pretty large stash of parts for these machines I'll be liquidating at some point when I have time to go through and build out the best units.
Just picked up this little gem. https://www.ebay.com/itm/225638790655 Did I need it? Not at all, but the seller basically forced me to buy it, I threw him a ridiculous offer of $50 which he should have refused given it was already so cheap, but he didn't so I had no choice. I'm the victim here.
That is concerning, really hard to say on that without video. The 7100 is a really good machine to tinker with though, good find and highly recommended I hope you can get it working.
Don't forget the caps on the video card, I've discovered that those are really starting to suffer from cap leaking. I have a pile of dead cards as a result. If it works recap the video card ASAP to keep it working.
I'd be strongly inclined to believe this is a dev kit and not a prototype, we make kits like this for our hardware projects regularly at my company. It has so many headers it's a dead giveaway. Prototypes are usually far more polished while still having a couple debug headers etc.
I didn't think it was cap goo either but it's uncanny that its only in areas where there are caps. It's quite tough to remove with a toothbrush and alcohol I need to get something better definitely has been eating at the board though whatever it is.
Picked this machine up and the board has one of the worst cases of what I assume is cap damage that I’ve ever seen. Not sure if this one will be repairable the more I look the worse it gets.
At least the battery didn’t leak! Bah! Rather have they then this crap all over the board.
