Didn't there used to be a G4 daughterboard of some sort that could run 2 unbalanced G4 CPU's, i.e a 350 mhz and a 450 mhz. Always imagined that could be useful if you could find a cheap supply of CPU's.

The whole 62/300 and 52/300 line up was nasty, in fairness though when I took my 5200 from 7.5.5 to 8 there was a big stability improvement and it seems slightly faster, I wonder if Apple did some tweaking in the OS for this lineup.
My 9500's stock card was an ATI Mach 64 with 2 megs of Vram, how much does the Twin Turbo have? I'd guess this is the problem, not enough video RAM for OS X.

You'll need the adapter dongle that originally came with the 2100 if you want to do cabled transfers. Personally I'd avoid all that malarky and download NCX. WiFi transfers are much more convenient. For any other software, try here: http://www.unna.org
Some of those adapters have a bucket load of slider pins and the correct settings can be a real pain to get right, aer you sure it's configured correctly. Serously, I'd look into getting a PCI GPU, you can pick up an ATI 128 for next to nothing and it's far quicker then the onboard graphics.
It'll work in any PCI Mac with OS 9, whether ot not it's worth it depends on the CPU, if you are running a high end Mach5 604e or G3/4 then great, if you are running the stock CPU (up to 200 mhz) then not worth it as the CPU can't offload the data to the GPU fast enough to make any difference.
