iMac G5 may work "fine" with multiple blown (bulging) capacitors, or might fail to POST or exhibit problems with just one defective capacitor.

If that was a eMac (the one with known capacitor disease) or iMac G5, then a full recap (including the PSU) would be totally in order. I had iMac G5s that didn't boot into OS (just froze) that had just one...
My condolences. Btw, why did you attempt to do a full recap anyways? Were there any problems that looked like there were bad capacitors? I deal with 70 year old radios and TVs sometimes, and I almost always replace just one cap and then test. I only do a full recap on few sets that I had...

I found another two laptops with vinegar syndrome, one of my favorite 486 laptops ever made - Compaq Contura Aero 425.
And one much newer, a Compaq Armada E500, from 2000! That one was still fine just 6 months ago.

I know they are pushing 25 year mark, but I have some apple stuff pushing 40 year mark and still going strong with original caps (except RIFAs).
I opted actually actually for Hybrid Polymers, not the standard Polymers. They are somewhere in between of a Polymer and normal Aluminum Electrolytics. A bit of a new technology. I don't think they will leak anytime soon also :)

NiCD and NiMH batteries can last decades (actually surpassing Lithium Ion), but only if their seals aren't broken, so the air can't get into and oxidise them. But as we can see, most of those batteries leak after all that time as the seals get breached, and the air enters, and the electrolyte...

There is an issue. Tantalum caps have much greater voltage derating. In simple words, tantalum capacitor that "sees" 12V needs to be more than 16V rated, that one should be 25V. Other types of cap technology don't have this problem. Apple used same rated capacitors (16V 47uF) on multiple voltage...
