I've got a Performa 638 CD wich i just put a new harddrive in, now i can boot it with the 7.5.3 Network Acces Disk. Now i downloaded and copied the 19 floppies with System 7.5.3 on them. How do i install this on the Mac ? I'm suppose to put the floppies in one by one but i can't take the Network Acces Disk out. What do i do now ?

From the position you're in now, there are two ways you can do it.

One way is to boot up using the first of the 19 disks you've downloaded (it's bootable)...and play swap the floppy for about 30 minutes.

The other way is via the network. If you extract the 19 disk images to a single folder on a second mac, and then boot the Performa from the network access disk, open the chooser and locate Disk 1 on the other Mac and away you go....

Well, it won't start up with the first floppy.
Is there another start up disk that i can download somewhere to boot up with and the insert the 19 floppies ?

Got a CD writer?

If so, you can download a bootable 7.5.3 CD from Gambas page:

I had the same problem, using a Performa 5200, I succeeded in installing the system software by the following method.

you can download an image of the 7.5.3 disk tools disk from here!

http://home.earthlink.net/~gamba2/bootdisks.html

I used ftp://ftp.zip.com.au/pub/mac/system/system7.5.3/disk_tools.sit

Expand the disk image to a 1.44 mb floppy and then boot the computer from it.

Now copy the files from the 7.5.3 disks system folder to your mac, when finished reboot!

I did this to a clean drive, however I can not see any reason why it would not work on an already installed drive. I would however backup my system 1st or at least have a copy of the origional software 1st.

It may be a good idea to format your HD before you do it, if there's nothing important on there that you don't already have a copy of, just to clear up any issues that may be solved by a good format.
