Correct me if I'm wrong but doesn't the EC chip lack an MMU like the '040 – and therefore would be of no use in a Mac?

Correct, as far as I'm aware the EC chips won't work as the subset of the MMU they implement wouldn't be transparently compatible with the 040 MMU.
