For completeness and future reference, I reverse engineered the pinout back to the two microcontrollers on the mouseboard or the Kensington 64210.
The MiniDin8 breakout cable pinout is:
Pin 1
ADB Data

After buying a Kensington 64210 and the lack of an adapter cable I can indeed confirm in having two microcontrollers in the mouse. The breakout cable is just passive.
For completeness and future reference, I reverse engineered the pinout back to the two microcontrollers.

Beside beeping the h*ll out of it between the port(s) and SWIM, it is worth trying to scope out U13C (74AC244) which do buffer these lines:
- Head Select (HDSEL)
- SWIM Read (SWREAD)
- Write Request (W/REQ)
