For the SCSI drives you can use the BlueSCSI v2 in Initiator Mode. It'll copy the disks once you connect the drive to it without the need of a Mac.

To add to the specs of the power supply: it needs to be center positive for the Pocket SCSI/Link.

According to the manual for the Pocket SCSI, it's a 5V, 1.0 Amp power supply.
