Well, this challenge idea sounds fun, but I would most likely have to use something fairly old (like my Quadra 950) to make it really a challenge though.
In my computing environment 1997 was a landmark year for hardware for me. Four of my main systems were released in that year and all are pretty much daily use systems. Here is a quick run down of them...
PowerBook 3400c/200 (released February 1997)
Mac OS 8.6, 80 MB of memory, 11 GB hard drive, PowerPC 603e at 200 MHz with 256k of L2 cache, 2 MB of video memory, and the following applications:
Power Macintosh 8600/300 (released August 1997)
Mac OS 8.6, 256 MB of memory, 9 GB hard drive, G3 at 450 MHz with 1 MB of L2 cache, 4 MB of onboard video memory, ixMicro Ultimate Rez and Pro Rez (8 MB of VRAM each) connected to two Apple 16" displays, Asante 10/100 ethernet card, an external SCSI CD-RW drive, VCR and DVD Player (connected via the AV ports) and the following applications:

Mac OS X v10.3.9, 512 MB of memory, 80 GB hard drive, G4 at 533 MHz with 1 MB of L2 cache, an ATI Radeon 7000 (32 MB of VRAM) connected to an Apple 17" Studio display, Ultra ATA/66 PCI card, USB Card, both a CD-ROM and a DVD-ROM, and the following applications:
As for what I use them for... pretty much anything you can think of. 3D modeling and animation, graphic design and illustration, web design, video capture and editing, and most likely a ton of other things I can't think of off hand.
My 8600 running Mac OS 8.6 is almost totally dedicated to video these days. I have been capturing rare video tape movies that never made it to DVDs, and when it isn't capturing, it is used as my main TV (I have cable TV running into it via the VCR). Because of this, I don't keep as many apps on it as space is important for video capturing.
My 3400c is my catch all system... there is almost no type of software I don't have on that system, so it makes a great training system. In addition to tons of software titles, I also have tons of PDF manuals and tutorials for most of those apps. At one point it was also my primary school system, but about a year ago I got a PowerBook G3 Lombard which now serves in that capacity.
I'm guessing that this might not qualify for the challenge though as it should be pretty obvious that working within these limitations is hardly limiting (or challenging) for me. But, if they do qualify that would be great!
